Sparkling water? Using Garden Pressure Sprayer?

It's been lingering in my small brain. I have to write.

So, I'm thinking of  making my own sparkling water. Using baking soda, acids and pressure sprayer. The pressure sprayer acts as the gasogene, containing the carbon dioxide produced from mixing baking soda with vinegar.

Wait, don't baking soda have it's own acid? Cream of tartar? Then, I'm referring to sodium bicarbonate.

My idea is to mix the sodium bicarbonate with vinegar in the pressure sprayer. Maybe releasing some of the air for a few seconds to flush out the other gases. Priming? And I would attach a plastic tube to a some cold water to start carbonation.

Or should I just add everything in the pressure sprayer (water and sodium bicarbonate) to make sparkling water.

Another idea that I have now is to make wine with pressure sprayer. Replacing the pressure cooker with pressure sprayer.
